Tonight I did some more of my "Once A Month Cooking" (my version spurts of 1 hour here and there).
For those of you with kids this might be one for you to try.
They are called Corn Dog Muffins and they are super simple and super cheap.
You need:
2 Boxes Jiffy Cornbread Mix
2/3 Cups Milk
2 Eggs
4 Hot Dogs- Cut Up (toddler size)
Mix all ingredients together. Put into greased cupcake pans (2/3 full) and cook at 400 for 15-20 min. After they are done baking make sure they are cooled completely and then put them in a gallon sized freezer bag and then freeze until you need a quick meal. To cook put in microwave 1 min or until heated thoroughly.
I love how simple this is and that it cost me just over $2 to make 18 of these muffins (in my house that's 4 1/2 meals!)
